BULK LAMB SHOULDER & CHOPS

Including one shoulder roast and five different varieties of chops, chose our Bulk Lamb Shoulder & Chops Pack, from our selection of good-value bulk lamb packs, for something to please everyone. 

We select Australian pasture-fed lambs mainly from Victorian farms. Our skilled butchers process the forequarter (front half) of the carcass. Halacha (Jewish law) forbids Jews to eat the sciatic nerve located in the hindquarter (rear half) of the animal; we follow the European minchag (custom) that the hindquarter is not used for kosher meat because of the risk of not removing the sciatic nerve completely.

Please note: The forequarter is weighed for billing purposes before processing, and at that stage it weighs approximately 11 kg. After processing, with the removal of fat and bone, the final weight is about 6-7 kg.

Lamb Cuts and Cooking Methods:

Lamb Shoulder  

Delight your family or guests with this delicious roast for

 4-6 people. This cut is from the joint of the front leg to the body, the shoulder. Lamb shoulder is high in fatty and connective tissue, making it suitable for slow roasting at low temperatures. Wrap the meat in foil and bake on 140oC for about 5 hours, then test if the meat comes easily off the bone. If necessary, bake for another hour.

Lamb Chops

Kids and adults alike love lamb chops. Each side of the forequarter is chopped at right angles to the spine by our butchers to produce a variety of chops. Shoulder, medium, round or baby lamb chops can be cooked on a high heat in the griller, frying pan or on the barbeque.
