Duck is sold whole and frozen. Weighs 1.9-2.3kg. Whole duck can be roasted in two ways: Chinese-style, where the skin is dried and lacquered as it cooks, or in the same way as a roast chicken in a hot oven. Unlike chicken, though, roast duck needs considerable help in de-fattening to avoid a greasy taste. You can do this by by scoring and pricking the duck, helping the fat to run out. Re-freeze product if not using within 1 day of receiving your order.
