TOP RIB SECOND cut

This cut of top rib is called second cut top rib becase its the end of the rib. These ribs come from up higher on the cow and are essentially the ribs you would find in a prime rib roast. The prime rib is a sought after cut of meat, so our butchers try to keep as much meat on these ribs as possible.
