Brisket Cap is the flap of the Full Brisket Beef. This is the ‘fatty’ or ‘moist’ cut of brisket and is used for slow cooking, smoking or pulled beef. A good Brisket Cap will have fat marbled throughout the meat, which helps keep the beef tender and juicy. Weighs approximately 500-800 g. Freeze product within 24 hours if not using within 1 day of receiving your order.
