To ‘Spatchcock’ a chicken, or butterfly it, is to remove the spine entirely, allowing it to be completely opened up and flattened; as has been done with these tasty whole pieces. Doing this reduces the cooking time substantially, and allows the whole bird to be cooked in different, time-saving ways, such as grilling or pan frying.
